Carolina Vinegar Slaw

A tangy, no-mayo Carolina-style slaw. Great on pulled pork or as a cookout side.

Yields: 12 to 15 as a side (3 lb cabbage)
Ingredients

- •3 lb shredded cabbage (bagged coleslaw mix works)
- •0.5 sweet onion (minced)
- •1 cup apple cider vinegar
- •0.5 cup sugar (a little less if you like it tangier)
- •0.25 cup vegetable oil
- •1 tbsp kosher salt
- •1 tsp black pepper
- •1 tsp celery seed (or 2 celery stalks, finely diced)
- •0.5 tsp red pepper flakes (to 1 tsp)
- •2 tsp prepared mustard
Instructions

Warm the vinegar, sugar, salt and mustard in a saucepan just until the sugar dissolves.

Off the heat, whisk in the oil, black pepper, celery seed and red pepper flakes.

Toss the warm dressing with the cabbage and onion in a large bowl.

Cover and chill at least 2 hours (overnight is even better), tossing once or twice.

Taste and adjust salt, sugar or vinegar right before serving. Serve with a slotted spoon.
